First off, I know this isn’t a cooking blog but I need to post this. I NEED to!
Over the years, I have become a latke maker. And not just for Hanukkah. My family likes to eat them once a week.
Latkes are cheap, tasty, and healthy. Okay, not healthy, but I digest.
There’s one thing you need to know about latke making. Add baking powder. There’s a million recipes out there, but they often omit baking powder. Perhaps adding baking powder is heresy in some circles. I don’t know. But it makes them lighter and a bit airy. Breezy.
Maybe like two teaspoons.
Here is a video I made with one hand. Sloppy latke flipping to be sure, but look at these babies!
Usually, I use a fish spatula and a fork to flip.
